Edie’s Pumpkin Cookies

Ingredients

1 cup shortening (Crisco., Beat until fluffy

1 cup sugar

1 large egg

1 cup pumpkin

2 cups flour (stir in gradually)

1 teaspoon Baking Soda

1 teaspoon Baking powder

1/2 teaspoon Salt

1 teaspoon cinnamon

Directions

Mix above well, then add:
1 teaspoon vanilla
6 oz mini chocolate chips

Drop by rounded teaspoon or tablespoon (depending on what size you want)
onto greased cookie sheet.
Bake at 350 for 13 minutes. Check a minute or so before. Test with a toothpick for
doneness.
