Freddy's Onion Chutney

Ingredients

2 red onions, sliced

1 red bell pepper, sliced into thin strips

1 dried or fresh chili (according to taste)

1 tomato, diced (I did not add it because I simply forgot to buy one)

125 ml water

125 ml brown sugar

125 ml red wine vinegar or white balsamic vinegar

salt and pepper to taste

Directions

1. Add all the ingredients, except the salt and pepper, to a pot. Gently let it simmer for about an hour until nice and sticky (not too sticky though, you want to add the salt and pepper later).

2. Let it cool for a few minutes, add salt and pepper, then let it cool thoroughly. I always add a tablespoon of Sriracha Chili Sauce (the one with the green cap).
